The last couple of weeks I’ve been making my own salads at home. I know it’s not that big a deal for you salad makers out there, but I just don’t make salads. I go to restaurants and eat salads, but I’ve never really MADE them. Yeah, I’ve done the Iceberg lettuce with cheese and ranch dressing . . . the thought of which makes me cringe now. Hehe. But, that’s all I grew up with. I guess it would be called the old school salad bar salad. The only thing missing is the standard macaroni with mayo salad to slide in next to it and some club crackers of course.

I made the decision, with this whole reboot thing, that I was going to learn to cook more and that included SALADS. I know you don’t really COOK them, but the whole idea of creating a salad was a little intimidating for some reason. How the crap do you pick the right things that go together and then put in the right amounts of this and that and some of the other and all that yadda yadda yadda??? After looking around on the internet I realized it wasn’t that big a deal at all. Just find some freakin’ recipes and start to mess around with them . . . STOP BEING A WUSS!!!

So, I did just that, and I have now found that I LOVE making salads!!! I’ve been cutting fruits and vegetables and chopping greens and nuts and even have gorgonzola cheese in my fridge. Is this the end of days? Maybe. But, I LOVE salads now. I especially love mixed greens, strawberries, pecans, gorgonzola, dried cherries and raspberry vinaigrette salads! I actually just had one and was REALLY shocked that I was getting crazy full about halfway through it. I mean, I’ve never gotten FULL on a salad before. I’m a Mickey D’s and Mac and Cheese guy. I’m a chub!!! Chubs don’t get full on salads . . . right? The whole thing kind of caught me off guard and then a smile eased over my cute cherubic face. HOLY CRAP! I WAS GETTING FULL ON A SALAD!!! A SALAD!!!!

I think this really proves to me that I’m making positive changes again. I’m caring enough to . . . well . . . care. Hehe. So, if you have any GREAT salad recipes or know what’s in your favorite salad, let me know! I’m on a chopping streak and looking for more ideas!!!
